So you bought a couple laying hens and now you’re up to your eyeballs in eggs! Well folks, it happens!! Chickens, as I’ve said before, are the gateway farm animal. So one can lead to many, many more. Eggs are such a versatile food and complete in nutrition. So they are pretty much the best. Let’s get into my favourite way to use excess eggs!
Pickled Eggs
Ok, ok, I know it might sound gross. I know I totally thought so when I first heard of them, and especially when you’ve only seen them at sketchy gas stations… But when done with pastured eggs at home, they are actually really good. Here is the recipe I used.
Dutch Baby
Not a real baby, but a pancake baby! While this doesn’t use a ton of eggs (3-4) it sure it an amazing breakfast. It’s pretty much a baked, puffed up pancake.
Quiche
A pretty standard one, but you can easily use up to a dozen eggs and there are tons of flavour options.
Frittata
Pretty much a crustless quiche. Another super easy recipe that can be made with anything you have on hand. Growing up with my Nonno and Nonna (Italian for grandparents) we had this a lot. Some of my favourite flavour options are spaghetti and asparagus!!
Egg Bake
My most favourite egg bake is one from Magnolia, we make it every Christmas morning. It’s an eggs Benedict bake! Eggs, bacon, bread, and a hollandaise sauce on top can it get any better? It’s in her 2018 Christmas addition.
Saucy Eggs
Another favourite recipe growing up! If you have leftover tomato sauce and ya know, some extra eggs around then this is super easy to whip up. Simply heat up tomato sauce and crack the eggs into the sauce. For a 10” pan, I add about 6-8 eggs and close the lid to cook. You’ll know when it’s ready when the eggs aren’t jiggly and clear on the top. Serve with buttered bread for dipping. And you’re welcome. Omelete/Scramble
Had to mention the obvious! Simply, yet effective for using extra eggs.
Freeze Dry
Yes, it is possible. I recently watched this video and it really inspired me. Who would have thought!
Freezing Eggs
Another thing I would have never thought, but it is possible and makes life so much easier. This is a great post on how to freeze eggs.
Creme Brulee
A sweet and delicious way to use extra eggs. Most recipes use at least 10 egg yolks.
Hard-Boiled Eggs
This is great for meal prep. Simply hard boil a whole dozen and have it in the fridge for snacks or meals throughout the week! I like to add my eggs into a boiling pot of water and boil for 9 minutes.
Pudding
Another great dessert that uses a lot of eggs. I can’t wait to try this recipe.
